Manufacturers produce sodium copper chlorophyllin using natural green plant leaves—silkworm excrement, clover, alfalfa and bamboo among them. Extraction of the raw plant materials relies on organic solvents including acetone, methanol, ethanol and petroleum ether. To synthesize the target product, technicians substitute the central magnesium ion inside chlorophyll with copper ions, then conduct alkaline saponification. This reaction removes methyl and phytol groups and converts them into carboxyl groups to form a disodium salt, making sodium copper chlorophyllin a semi-synthetic pigment. Other similar pigments made through comparable processes include sodium iron chlorophyllin and sodium zinc chlorophyllin.
