Commonly known as formic acid ethyl ester, ethyl formate is a clear, lowviscosity colourless liquid. Compliant with GB276096 requirements, it is approved for foodflavouring purposes and extensively utilised to craft rum, apricot, peach, pineapple, blendedfruit and sherry flavour profiles. It appears naturally across many matrices: Boronia dentigeroides, Florida orange juice, honey, brandy, strawberries, raspberries, onions, apples, pears and rum. Industrial production relies on esterification with formic acid under sulfuric acid catalysis; subsequent dehydration and distillation are performed with phosphorus pentoxide or calcium chloride to obtain the finished product.
