Product Description
This acetate is produced by the condensation of acetic acid and (Z)-hex-3-ene-1-ol. At levels below 10 ppm, it provides a pleasant fruity-green flavor, while below 2 ppm it gives a clear banana-like aroma. This ester can also interact with other compounds to create interesting flavor effects.
For instance, about 1 ppm of cis-3-hexenyl acetate combined with 0.05 ppm of allyl isothiocyanate produces a distinct unripe banana flavor with green, fruity notes. At these low concentrations, neither compound shows a strong individual taste, but together they create a clear banana-like impression without noticeable mustard characteristics.
